2. Important Safeguards
When using electrical appliances, basic safety precautions should always be followed. Failure to follow these instructions may result in property damage, personal injury, or death.
- Read all instructions before operating the appliance.
- Do not touch hot surfaces. Use handles or knobs.
- To protect against electrical shock, do not immerse cord, plugs, or the appliance in water or other liquid.
- Close supervision is necessary when any appliance is used by or near children.
- Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.
- Do not operate any appliance with a damaged cord or plug, or after the appliance malfunctions or has been damaged in any manner.
- Do not use outdoors.
- Do not place on or near a hot gas or electric burner, or in a heated oven.
- Extreme caution must be used when moving an appliance containing hot oil or other hot liquids.
- Always attach plug to appliance first, then plug cord into the wall outlet. To disconnect, turn any control to "off", then remove plug from wall outlet.
- Do not use appliance for other than intended use.
- This appliance cooks under pressure. Improper use may result in scalding injury. Ensure unit is properly closed before operating.
- Never force open the Instant Pot. Ensure the pressure has been completely released before opening.
- Do not fill the unit over 2/3 full. When cooking foods that expand during cooking, such as rice or dried vegetables, do not fill the unit over 1/2 full.
- Always check the anti-block shield and steam release valve for clogging before use.

4. Initial Setup
Before using your Instant Pot NOVA 6 for the first time, follow these steps:
- Unpacking: Remove all packaging materials from inside and around the cooker.
- Cleaning: Wash the inner pot, lid, and sealing ring with warm soapy water. Rinse thoroughly and dry all parts. Wipe the exterior of the cooker base with a damp cloth.
- Install Condensation Collector: Ensure the condensation collector is properly installed at the back of the cooker base.
- Perform Water Test: This test familiarizes you with the Instant Pot's operation and ensures it is functioning correctly.
- Add 3 cups of water to the inner pot.
- Place the inner pot into the cooker base.
- Close the lid, ensuring it is properly aligned and locked. The Easy Seal Lid will automatically set the steam release valve to the sealed position.
- Press the "Pressure Cook" button, then adjust the time to 5 minutes using the "+" or "-" buttons.
- The cooker will begin preheating, then pressurize. Once pressurized, the cooking cycle will begin.
- After 5 minutes, the cooker will beep and switch to "Keep Warm".
- Press the "Cancel" button.
- Carefully press the Quick Release button to release the steam. Once the float valve drops, you can safely open the lid.
5. Operating Instructions

5.2 Basic Operation Steps
- Prepare Ingredients: Place your ingredients and liquid into the stainless steel inner pot. Ensure the liquid meets the minimum requirement for pressure cooking (typically 1 cup for 6-quart models).
- Insert Inner Pot: Place the inner pot into the cooker base.
- Close Lid: Align the lid with the base and turn it clockwise until it locks. The Easy Seal Lid will automatically set the steam release valve to the sealed position.
- Select Smart Program: Press the desired smart program button (e.g., "Soup/Broth", "Meat/Stew", "Rice"). The default cooking time will appear on the display.
- Adjust Time/Pressure (Optional): Use the "+" or "-" buttons to adjust the cooking time. For some programs, you can also adjust the pressure level (Low/High) or temperature (Less/Normal/More) using the "Pressure Level" or "Adjust" buttons.
- Start Cooking: The cooker will automatically begin preheating after a few seconds. The display will show "On" during preheating. Once pressurized, the cooking timer will begin counting down.
- Pressure Release:
- Natural Release (NPR): Allows pressure to dissipate naturally over time. This is recommended for foamy foods or large cuts of meat. The float valve will drop on its own.
- Quick Release (QPR): Press the Quick Release button on the lid. Steam will rapidly vent from the steam release valve. Keep hands and face clear of the steam.
- Open Lid: Once the float valve has dropped, turn the lid counter-clockwise and lift it off.
5.3 Specific Cooking Functions
- Pressure Cook: For fast cooking under pressure. Use the "Pressure Cook" button and adjust time.
- Sauté: Use this function to brown meats or sauté vegetables before pressure cooking. Press "Sauté" and adjust temperature (Less/Normal/More).
- Slow Cook: For traditional slow cooking. Press "Slow Cook" and adjust time and temperature. Ensure the steam release valve is in the venting position (or use a glass lid, sold separately).

6. Maintenance and Cleaning

- Sealing Ring: The sealing ring is crucial for pressure cooking. Inspect it regularly for cracks, deformation, or damage. Replace if necessary (a bonus sealing ring is included).
- Cooker Base: Wipe the exterior of the cooker base with a damp cloth. Never immerse the cooker base in water or other liquids.
- Condensation Collector: Empty and clean the condensation collector after each use.
- Steam Release Valve & Float Valve: Ensure these are clear of food debris before each use.
