Setup

Operating Instructions

1. Using the Coarse 325 Grit Side (Edge Setting)
The coarse 325 grit side is used for quickly setting a new edge, repairing dull or damaged blades, and removing significant material. This side is ideal for initial sharpening of very dull knives, chisels, axes, and other tools.
- Select Angle: Place the sharpening angle guide on the coarse side of the stone. Position your blade against the desired angle (e.g., 20° for most kitchen knives, 25° for outdoor/utility knives).
- Sharpening Motion: With light to moderate pressure, push the blade across the stone, leading with the edge. Maintain the selected angle throughout the stroke.
- Consistency: Perform several strokes on one side of the blade, then flip the blade and perform an equal number of strokes on the other side. Continue alternating until a burr (a slight wire edge) forms along the entire length of the blade's opposite side.
2. Using the Extra Fine 1200 Grit Side (Honing and Finishing)
The extra fine 1200 grit side is used for refining the edge, removing the burr, and achieving a razor-sharp finish. This step polishes the edge and prepares it for optimal cutting performance.
- Transition: Once a burr is established on the coarse side, switch to the extra fine 1200 grit side.
- Refine Edge: Using the same angle as before, perform lighter strokes on the extra fine side. Reduce pressure with each set of strokes.
- Burr Removal: Alternate sides frequently, reducing the number of strokes and pressure until the burr is completely removed and the edge feels smooth and sharp.
