This manual provides detailed instructions for the safe and efficient operation of your Brewista Pro 2 Commercial Cold Brewing System. Please read this manual thoroughly before initial use and retain it for future reference. The Brewista Pro 2 is designed for commercial cold brew coffee production, featuring an integrated design for ease of use and cleaning.

Important Safety Information

  • Always handle the system with care, especially when filled with liquid, to prevent spills or damage.
  • Ensure all components are properly assembled and securely fitted before adding ingredients or operating the system.
  • Do not use abrasive cleaners, harsh chemicals, or scouring pads, as these can scratch or damage the surfaces of the brew vessel and filters.
  • Keep the cold brewing system out of reach of children and pets.
  • This system is specifically designed for cold brewing coffee. Do not use it with hot liquids, for purposes other than intended, or with substances that could damage the materials.

Setup Instructions

1. Unpacking and Initial Cleaning

Carefully remove all components from the packaging. Before first use, wash all parts with warm, soapy water. Rinse thoroughly with clean water and allow to air dry completely.

2. Assembling the Spigot

Insert the dispensing spigot into the designated opening at the bottom of the brew vessel. Ensure the spigot is securely tightened to create a leak-free seal. The spigot facilitates easy dispensing of the cold brew concentrate.

3. Preparing the Filter System

Place the photo-etched stainless steel permanent filter inside the brew vessel. This filter is designed to sit on integrated supports within the vessel, eliminating the need for an adaptor ring. For finer filtration, you may choose to line the permanent filter with one of the provided Brewista Essentials Paper Filters or PLA Filters.

Operating Instructions: Cold Brewing Process

1. Add Coffee Grounds

Add your desired amount of coarse-ground coffee into the filter basket. The Brewista Pro 2 system is designed to accommodate large batches suitable for commercial use.

2. Add Water

Slowly pour cold, filtered water over the coffee grounds in the filter basket. Ensure all grounds are thoroughly saturated. The translucent brew vessel allows you to easily monitor the liquid level during this process.

3. Steep

Place the lid on the brew vessel and allow the coffee to steep for 12-24 hours, depending on your desired strength and concentration. Store the system in a cool place or refrigerator during the steeping process.

4. Drain the Concentrate

Once steeping is complete, utilize the patented lift-and-twist drain design. Lift the filter basket and twist it to rest on the integrated supports above the liquid level. This mechanism allows the cold brew concentrate to drain fully into the main vessel for easy dispensing, minimizing mess and maximizing yield.

5. Dispense

Open the spigot to dispense the cold brew concentrate. The tapered bottom of the vessel ensures complete drainage, and the recessed outlet filter holder with retention well helps catch any errant grounds, providing a clean final product.

Maintenance and Cleaning

1. After Each Use

After each brewing cycle, empty any remaining coffee grounds from the filter basket. Disassemble the spigot and all filter components. Wash all parts with warm, soapy water. Use a soft brush for the stainless steel mesh filter to effectively remove any trapped coffee particles. Rinse all components thoroughly with clean water and allow them to air dry completely before reassembly or storage.

2. Deep Cleaning

Periodically, perform a deep clean using a food-safe cleaning solution to prevent residue buildup and maintain optimal hygiene. Follow the specific instructions provided by the cleaning solution manufacturer for dilution and contact time. After cleaning, rinse all components multiple times with fresh water to ensure no cleaning solution remains before next use.

Troubleshooting

Slow Dispensing

If the cold brew concentrate dispenses too slowly, check the outlet filter for potential clogging. The fine filtration of the outlet filter can sometimes restrict flow, especially if very fine coffee particles are present. Ensure the filter is clean or consider replacing it if it appears heavily used. For applications that do not require extremely fine filtration (e.g., not for nitro taps), you may find that thorough cleaning of the outlet filter is sufficient.

Faucet Leaks

If the spigot exhibits any leakage, ensure it is securely tightened and that its gasket is properly seated. Disassemble the spigot, inspect the gasket for any signs of damage or wear, clean the area around the spigot opening, and reassemble firmly.

Filter Tearing (Paper/PLA Filters)

When using paper or PLA filters, exercise caution during placement into the permanent filter basket. Avoid forcing them or handling them roughly, particularly when they are wet or filled with coffee grounds, to prevent tearing. Pour water slowly and evenly to avoid dislodging the filter.
