1. Introduction

3. Setup
3.1 Unpacking and Assembly
Carefully remove all components from the packaging. It is recommended to have a second person assist with assembly due to the size and weight of the unit. Follow the detailed assembly instructions provided in the separate assembly guide (PDF link available in the Support section).

3.2 Component Identification
- Adjustable Stainless Steel Cooking Grids (x4): For holding food during smoking.
- Extra Large Stainless Steel Water Bowl: Holds water to maintain moisture during smoking.
- Smoker Tray / Heavy-Duty Charcoal Tray: For wood chips or charcoal (depending on model).
- Roto-Draft Cast Aluminum Damper System: Controls airflow and temperature.
- Door Mounted Accu-Temp Thermometer: Monitors internal temperature.

3.3 Gas Connection (Natural Gas Model)
Connect the smoker to a natural gas supply line using a certified gas hose and regulator (not included, typically supplied by gas installer). Ensure all connections are secure and comply with local codes. It is recommended to have a qualified gas technician perform the initial connection and leak test.
4. Operating Instructions
4.1 Pre-Operation Check
- Ensure the smoker is on a level, stable surface.
- Verify all gas connections are secure.
- Fill the water bowl with water or other liquid (e.g., apple juice, beer) for moisture.
- Add desired wood chips or chunks to the smoker tray for flavor.
4.2 Electronic Ignition
- Open the smoker doors.
- Turn the control knob to the HIGH position.
- Press and hold the Sure-Lite electronic ignition button. You should hear a clicking sound and see a flame.
- If the burner does not ignite within 5 seconds, turn the control knob to OFF, wait 5 minutes, and repeat the process.

4.3 Temperature Control
Adjust the temperature using the main control knob and the Roto-Draft cast aluminum damper system. The damper system, located on the sides of the smoker, allows you to fine-tune airflow, which directly impacts the internal temperature. The door-mounted Accu-Temp thermometer provides a general indication of the internal temperature. For precise temperature monitoring, especially at meat level, consider using an additional, calibrated thermometer.

4.4 Loading Food
Place food on the adjustable stainless steel cooking grids. The four grids allow for versatile arrangement of various food items. The dual-door design allows access to the lower water and smoker trays without opening the main cooking chamber, minimizing heat loss.

5. Maintenance
5.1 Cleaning
- Cooking Grids: The stainless steel cooking grids are easy to clean. After each use, allow them to cool, then scrape off any food residue with a grill brush. Wash with warm, soapy water and rinse thoroughly.
- Water Bowl and Smoker Tray: Empty and clean these trays after each use to prevent buildup and odors.
- Interior and Exterior: Wipe down the interior and exterior surfaces with a damp cloth and mild detergent as needed. Avoid abrasive cleaners that could damage the finish.
- Grease Management: Regularly check and clean the grease management system to prevent blockages and potential fire hazards.
5.2 Storage
When not in use, store the smoker in a dry, protected area. If storing outdoors, use a weather-resistant cover to protect it from the elements. Ensure the gas supply is turned off at the source.
6. Troubleshooting
