Introduction
Thank you for choosing the Monix Veloce 7 Litre Rapid Pressure Cooker. This manual provides essential information for the safe and efficient operation, maintenance, and troubleshooting of your new appliance. Please read this manual thoroughly before first use and keep it for future reference.
Important Safety Instructions
WARNING: Failure to follow these safety instructions could result in serious injury or property damage.
- Read all instructions carefully before using the pressure cooker.
- Do not touch hot surfaces. Use handles or knobs.
- Close supervision is necessary when the pressure cooker is used near children.
- Do not place the pressure cooker in a heated oven.
- Extreme caution must be used when moving a pressure cooker containing hot liquids.
- Do not use the pressure cooker for other than intended use.
- This appliance cooks under pressure. Improper use may result in scalding injury. Make certain unit is properly closed before operating. See "Operating Instructions" section.
- Do not fill the unit over 2/3 full. When cooking foods that expand during cooking, such as rice or dehydrated vegetables, do not fill the unit over 1/2 full.
- Certain foods, such as applesauce, cranberries, pearl barley, oatmeal or other cereals, split peas, noodles, macaroni, rhubarb, or spaghetti can foam, froth, and sputter, and clog the pressure release device. These foods should not be cooked in a pressure cooker.
- Always check the pressure release devices for clogging before use.
- Do not open the pressure cooker until the unit has cooled and internal pressure has been released. If the handles are difficult to push apart, this indicates that the cooker is still under pressure – do not force it open. Any pressure in the cooker can be dangerous. See "Operating Instructions" section.
- Do not use this pressure cooker for deep frying with oil.
- Do not tamper with any of the safety systems beyond the maintenance instructions specified in the operating instructions.
- Use only Monix replacement parts as this may affect the safety systems.

Setup and First Use
- Unpacking: Carefully remove all packaging materials and inspect the pressure cooker for any damage.
- Initial Cleaning: Before first use, wash the cooker body and lid thoroughly with warm soapy water. Rinse well and dry completely. Ensure all valves and gaskets are clean and free of debris.
- Lid Assembly: Ensure the sealing gasket is properly seated inside the lid rim.
- Familiarization: Practice opening and closing the lid without food or water to understand the scissor handle mechanism. The lid should close securely with an audible click.
Operating Instructions
Filling the Cooker:
- Always add at least 250ml (1 cup) of liquid to generate steam.
- Do not fill the cooker more than 2/3 full with food and liquid.
- For foods that expand (e.g., rice, beans), do not fill more than 1/2 full.
Closing the Lid:
- Align the lid with the cooker body.
- Press the scissor handle together firmly until the lid locks into place. Ensure it is fully sealed.
Cooking:
- Place the sealed pressure cooker on a suitable heat source (compatible with all cooktops, including induction).
- Set the heat to high. Steam will begin to escape from the pressure regulator valve, and the pressure indicator will rise.
- Once the desired pressure level is reached (the cooker operates on two levels, indicated by the pressure regulator), reduce the heat to maintain a steady, gentle steam release.
- Begin timing your recipe from this point.
Releasing Pressure:
There are two primary methods for releasing pressure:
- Natural Release: Remove the cooker from the heat source and allow it to cool down naturally. The pressure indicator will drop when all pressure has been released. This method is ideal for foods that benefit from continued cooking, such as stews and roasts.
- Quick Release: For faster pressure release, carefully move the pressure regulator valve to the steam release position. Caution: A strong jet of steam will be released. Keep hands and face away from the steam. Do not use this method for foamy foods or liquids.
Opening the Lid:
Only open the lid once the pressure indicator has fully dropped and no steam is escaping. If the lid is difficult to open, there is still pressure inside. Do not force it. Wait longer or use the quick release method if appropriate.
Care and Maintenance
Cleaning:
- After Each Use: Wash the cooker body and lid with warm, soapy water. The cooker body is dishwasher safe.
- Lid Components: Carefully clean the pressure regulator valve and safety valve to ensure they are free from food particles. The sealing gasket should be removed and washed separately.
- Drying: Dry all parts thoroughly before storing to prevent water spots and corrosion.
Storage:
Store the pressure cooker with the lid inverted on the pot to allow air circulation and prevent odors. Store in a dry place.
Maintenance:
- Regularly inspect the sealing gasket for cracks or wear. Replace if necessary (Monix genuine parts recommended).
- Ensure the pressure regulator valve and safety valve are clear and move freely.
Troubleshooting
| Problem | Possible Cause | Solution |
|---|---|---|
| Pressure not building up. | Lid not properly sealed; insufficient liquid; gasket worn or misplaced. | Ensure lid is securely closed. Add more liquid. Check and reposition/replace gasket. |
| Steam escaping from lid edges. | Lid not sealed; gasket dirty or damaged. | Re-seat lid. Clean or replace gasket. |
| Pressure indicator not rising. | No pressure built; indicator mechanism clogged. | Check for proper sealing and sufficient heat. Clean indicator mechanism. |
| Lid cannot be opened after cooking. | Pressure still inside. | Do not force. Allow more time for natural pressure release or use quick release method if safe for contents. |
