Indoor Pressure Smoker and Cooker

1. Important Safeguards

When using electrical appliances, basic safety precautions should always be followed to reduce the risk of fire, electric shock, and injury to persons. Read all instructions carefully before operating the EMSON Smoker.

  • Do not touch hot surfaces. Use handles or knobs.
  • To protect against electrical shock, do not immerse cord, plugs, or the main unit in water or other liquid.
  • Close supervision is necessary when any appliance is used by or near children.
  • Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.
  • Do not operate any appliance with a damaged cord or plug, or after the appliance malfunctions or has been damaged in any manner.
  • The use of accessory attachments not recommended by the appliance manufacturer may cause injuries.
  • Do not use outdoors.
  • Do not let cord hang over edge of table or counter, or touch hot surfaces.
  • Do not place on or near a hot gas or electric burner, or in a heated oven.
  • Extreme caution must be used when moving an appliance containing hot oil or other hot liquids.
  • Always attach plug to appliance first, then plug cord into the wall outlet. To disconnect, turn any control to "off", then remove plug from wall outlet.
  • Do not use appliance for other than intended use.
  • This appliance cooks under pressure. Improper use may result in scalding injury. Make certain unit is properly closed before operating.
  • Never force open the unit. Make sure internal pressure has been completely released before opening.
  • Do not use this pressure cooker for frying with oil.
  • Always check the pressure release valve for clogging before use.
  • Do not fill the unit over 2/3 full. When cooking foods that expand during cooking, such as rice or dried vegetables, do not fill the unit over 1/2 full.

2. Product Components

Familiarize yourself with the parts of your EMSON Smoker before initial use.

  • Main Unit: The primary housing containing the heating element and control panel.
  • Inner Pot: Removable non-stick cooking pot.
  • Lid: Locking lid with handle and pressure release mechanism.

3. Setup

3.1 Initial Cleaning

  1. Remove all packaging materials, stickers, and labels.
  2. Wash the inner pot, lid (without immersing the main unit), sealing gasket, pressure release valve, condensation collector, smoking chip box, and cooking racks with warm, soapy water. Rinse thoroughly and dry completely.
  3. Wipe the exterior of the main unit with a damp cloth. Do not immerse the main unit in water.

3.2 Assembly

  1. Place the inner pot into the main unit, ensuring it sits correctly.
  2. Insert the sealing gasket firmly into the lid.
  3. Attach the condensation collector to the back of the main unit.
  4. Ensure the pressure release valve is clean and properly seated on the lid.

3.3 Initial Test Run (Water Test)

Before cooking food, perform a water test to ensure the unit is functioning correctly and to familiarize yourself with its operation.

  1. Add 2-3 cups of water to the inner pot.
  2. Close the lid, ensuring it is locked securely. Align the arrows on the lid and unit, then rotate the handle clockwise until it clicks into place.
  3. Plug the power cord into a grounded electrical outlet.
  4. Select a pressure cooking function (e.g., 'PRESS/STEAM') and set the time for 5 minutes.
  5. Press 'START'. The unit will begin to heat and build pressure.
  6. Once the cooking cycle is complete, allow the pressure to release naturally or use the quick release method (refer to operating instructions).
  7. Once pressure is fully released, open the lid and discard the water. The unit is now ready for use.

4. Operating Instructions

4.1 Control Panel Overview

The control panel features a digital display and various function buttons for different cooking modes.

  • Digital Display: Shows cooking time, temperature, and status.
  • HOT/COLD: Selects between hot and cold smoking modes.
  • PRESS/STEAM: Activates pressure cooking or steaming.
  • BROWN: For searing or browning food.
  • DELAY: Sets a delayed start time.
  • WARM: Keeps food warm after cooking.
  • UP/DOWN Arrows: Adjusts time or temperature settings.
  • START: Begins the selected cooking program.
  • STOP: Cancels the current program or turns off the unit.

4.2 Hot Smoking

This mode combines pressure cooking with wood smoke for tender, flavorful results.

  1. Add desired wood chips to the smoking chip box. Do not overfill.
  2. Place food on the cooking racks inside the inner pot. Ensure there is sufficient liquid for pressure cooking if required by the recipe.
  3. Close and lock the lid securely.
  4. Press the 'HOT/COLD' button until 'HOT SMOKE' is selected.
  5. Use the 'UP/DOWN' arrows to set the desired cooking time.
  6. Press 'START' to begin. The unit will heat up, build pressure, and infuse smoke.
  7. Once cooking is complete, the unit will beep. Carefully release pressure using the valve or allow natural release.
  8. Open the lid away from your face and remove food.

4.3 Cold Smoking

Ideal for infusing smoke flavor into items like cheese, nuts, or fish without cooking them.

  1. Add a small amount of wood chips to the smoking chip box.
  2. Place the food to be cold smoked on the racks.
  3. Close and lock the lid.
  4. Press the 'HOT/COLD' button until 'COLD SMOKE' is selected.
  5. Use the 'UP/DOWN' arrows to set the desired smoking time. Cold smoking typically requires shorter times (e.g., 10-30 minutes).
  6. Press 'START'. The unit will generate smoke without significant heat.
  7. Once complete, press 'STOP', open the lid, and remove the food.

4.4 Pressure Cooking / Steaming

Use this function for traditional pressure cooking or steaming without smoke.

  1. Add food and liquid to the inner pot. Do not exceed the MAX fill line.
  2. Close and lock the lid.
  3. Press the 'PRESS/STEAM' button.
  4. Adjust the cooking time using the 'UP/DOWN' arrows.
  5. Press 'START'.
  6. After cooking, release pressure as desired and open the lid.

4.5 Browning

This function allows you to sear or brown ingredients directly in the inner pot before pressure cooking.

  1. Add a small amount of cooking oil to the inner pot.
  2. Press the 'BROWN' button.
  3. Press 'START'. The unit will begin to heat.
  4. Once hot, add food to the inner pot and brown as desired.
  5. Press 'STOP' when finished browning, then proceed with other cooking functions if needed.

4.6 Delay and Warm Functions

  • DELAY: Use this button to set a delayed start time for your cooking program. After selecting your cooking function and time, press 'DELAY' and use the 'UP/DOWN' arrows to set the delay duration. Press 'START' to confirm.
  • WARM: The unit automatically switches to 'WARM' mode after most cooking cycles. You can also manually select 'WARM' to keep food at a serving temperature.

5. Maintenance and Cleaning

Proper cleaning and maintenance ensure the longevity and safe operation of your EMSON Smoker.

  1. Always unplug the unit and allow it to cool completely before cleaning.
  2. Inner Pot: Wash with warm, soapy water and a non-abrasive sponge. The non-stick coating should be handled with care.
  3. Lid: Remove the sealing gasket and wash it, the lid, and the pressure release valve with warm, soapy water. Ensure all food particles are removed from the valve. Reassemble after drying.
  4. Main Unit: Wipe the exterior with a damp cloth. Do not immerse the main unit in water or any other liquid. Ensure the electrical contacts remain dry.
  5. Condensation Collector: Empty and wash after each use.
  6. Smoking Chip Box & Racks: Wash with warm, soapy water.
  7. Store the unit in a dry place.

6. Troubleshooting

Problem Possible Cause Solution
Unit does not power on. Not plugged in; power outlet malfunction; unit not assembled correctly. Ensure power cord is securely plugged into a working outlet. Check that the inner pot is correctly seated and the lid is locked.
Pressure not building or steam leaking from lid. Lid not properly closed/locked; sealing gasket improperly installed or damaged; pressure release valve clogged or not seated. Ensure lid is fully locked. Check sealing gasket for proper placement and damage. Clean and properly seat the pressure release valve.
Food not cooking properly. Incorrect cooking time/temperature; insufficient liquid for pressure; lid not sealed. Verify recipe instructions for correct settings. Ensure adequate liquid is present. Check lid seal.
Excessive smoke/odor during indoor use. Too many wood chips used; unit placed in poorly ventilated area. Reduce the amount of wood chips. Ensure adequate ventilation, such as using under a kitchen exhaust fan.
