2. Important Safety Instructions

4. Setup

5. Operating Instructions
The Edlund Model 401 features a two-stage sharpening process: a coarse grit for initial sharpening and a medium grit for honing and finishing. The precise guidance system ensures consistent blade angles.
- Power On: Flip the lighted rocker switch to the "ON" position. The light will illuminate, indicating the motor is running.
- Sharpening Stage 1 (Coarse):
- Hold the knife with the blade facing away from you.
- Insert the knife blade into the coarse sharpening slot (typically the slot furthest from the power switch) at the heel of the blade.
- Draw the knife slowly and steadily towards you, maintaining light, even pressure. The guidance system will hold the blade at the correct angle.
- Repeat this process 3-5 times for each side of the blade, alternating sides.
- Sharpening Stage 2 (Medium/Honing):
- Move the knife blade to the medium/honing slot (typically the slot closer to the power switch).
- Draw the knife slowly and steadily towards you, applying very light pressure.
- Repeat this process 1-2 times for each side of the blade, alternating sides, to refine the edge.
- Testing the Edge: Carefully test the sharpness of the blade. If not sufficiently sharp, repeat the honing stage.
- Scalloped Edged Knives: For scalloped or serrated knives, use only the medium/honing slot. Draw the knife through the slot with very light pressure, focusing on sharpening the points of the serrations. Do not use the coarse slot for serrated knives.
- Power Off: Once sharpening is complete, flip the rocker switch to the "OFF" position and unplug the unit.

6. Maintenance and Cleaning
Regular cleaning ensures optimal performance and extends the life of your sharpener.
- Unplug Before Cleaning: Always ensure the sharpener is unplugged from the power outlet before cleaning.
- Removing the Guidance System: The ABS plastic knife guide is designed to pop out for easy cleaning. Gently pull the blue guidance system upwards and outwards to detach it from the main unit.
- Cleaning the Guidance System: Wash the removable guidance system with warm, soapy water. Rinse thoroughly and allow it to air dry completely before reattaching.
- Cleaning the Unit: Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.
- Reattaching the Guidance System: Align the guidance system with the slots on the sharpener and press down firmly until it clicks securely into place.
- Sharpening Wheel Cleaning: Over time, metal particles may accumulate on the sharpening wheels. While the guidance system is removed, you can gently brush the wheels with a stiff, non-metallic brush to remove debris. Do not use water directly on the sharpening wheels.
