1. Introduction

4. Setup

4.1. Assembling the Machine

  1. Place the pasta machine body on a stable, flat surface.
  2. Attach the clamp to the machine base and secure it to your countertop or table. Ensure the machine is stable and does not wobble.
  3. Insert the hand crank into the designated hole on the side of the machine.

4.2. Attaching Pasta Dies

  1. Select the desired pasta die for the shape you wish to make (Bucatini, Fusilli, Maccheroni, Maccheroncini, or Rigatoni).
  2. Unscrew the front ring of the extruder.
  3. Carefully insert the chosen pasta die into the extruder opening, ensuring it sits flush.
  4. Screw the front ring back on firmly by hand to secure the die. Do not overtighten.

5. Operation

5.1. Dough Preparation

For extruded pasta, the dough consistency is crucial. It should be firmer and less sticky than dough used for rolled pasta. A good starting point is a dough that is firm to the touch but still pliable. If the dough is too soft, it may stick; if too hard, it may be difficult to extrude.

5.2. Extruding Pasta

  1. Ensure the desired pasta die is securely in place.
  2. Break off small, manageable pieces of dough.
  3. Feed the dough pieces into the hopper at the top of the machine.
  4. Turn the hand crank steadily. The dough will be pushed through the die, extruding the pasta shape.
  5. As the pasta emerges, use a knife or the provided cutter to cut it to your desired length.
  6. Place the freshly cut pasta on a lightly floured surface or a baking sheet lined with parchment paper to prevent sticking.

6. Maintenance and Cleaning

  • Not Dishwasher Safe: The Regina pasta machine is NOT dishwasher safe.
  • After use, allow any remaining dough residue to dry for at least 30 minutes. This makes it easier to remove.
  • Use a dry cleaning brush or a wooden pick to remove dried dough from the dies and internal components.
  • Wipe the machine housing with a dry or slightly damp cloth. Do not use abrasive cleaners or metal objects that could scratch the surface.
  • Store the machine in a dry place.

7. Troubleshooting

7.1. Pasta Not Extruding or Sticking

  • Dough Consistency: If pasta is not extruding or is sticking, the dough may be too wet or too dry. Adjust the dough by adding a small amount of flour if it's too sticky, or a few drops of water if it's too dry. The ideal dough should be firm but pliable.
  • Obstruction: Ensure no dried dough or foreign objects are blocking the die or the internal mechanism. Clean thoroughly as per the maintenance instructions.

7.2. Difficulty Removing Extruder Dies

  • If the die is difficult to remove, ensure all dough has been cleared from the machine. Sometimes, running the hand crank backward can help loosen it. If still stuck, gently use a wrench (provided) to loosen the front ring.
