4. Setup and Initial Use

Unpacking and Inspection:

  • Carefully remove all components from the packaging.
  • Inspect the pressure cooker/canner for any signs of damage. Do not use if damaged.
  • Ensure all listed components are present.

Initial Cleaning:

  • Wash the pot, lid, and all accessories (racks, weights) in warm, soapy water.
  • Rinse thoroughly and dry completely.
  • Inspect the sealing gasket for any cracks or damage. Ensure it is properly seated in the lid.

Lid Assembly:

  • Ensure the sealing gasket is correctly positioned around the rim of the lid.
  • Verify that the over-pressure release valve and gasket release window are clear and free of debris.
  • Place the desired pressure regulator weight (5, 10, or 15 PSI) onto the vent pipe on the lid. Ensure it is seated firmly.

5. Operating Instructions

General Pressure Cooking:

  1. Add food and the required amount of liquid to the pressure cooker pot. Do not exceed the 2/3 full mark (1/2 full for expanding foods).
  2. Place the lid on the pot, aligning the arrows on the lid and pot handles. Rotate the lid clockwise until the handles lock securely.
  3. Place the appropriate pressure regulator weight onto the vent pipe.
  4. Heat the cooker over a high heat source. Steam will begin to escape steadily from the vent pipe. Allow steam to escape for 10 minutes to vent air from the cooker.
  5. After 10 minutes of steady steam, the pressure regulator weight will begin to jiggle or rock gently. This indicates that the desired pressure has been reached.
  6. Reduce heat to the lowest setting that maintains a steady, gentle rocking motion of the pressure regulator weight. Begin timing your recipe.
  7. Once cooking time is complete, remove the cooker from heat. Allow pressure to drop naturally until the pressure indicator drops and no steam escapes when the weight is nudged. Alternatively, for faster pressure release, carefully place the cooker under cold running water, avoiding the vent pipe, until pressure drops.
  8. Once pressure is fully released, remove the pressure regulator weight and carefully open the lid by rotating it counter-clockwise.

Pressure Canning:

Pressure canning requires specific procedures to ensure food safety. Always refer to current, tested canning recipes and guidelines from reputable sources (e.g., USDA, National Center for Home Food Preservation).

  1. Prepare jars and food according to your chosen canning recipe.
  2. Place one of the cooking racks at the bottom of the canner. Add the recommended amount of hot water (usually 2-3 inches, or as specified by your recipe).
  3. Carefully place filled jars onto the rack. If stacking jars, place the second rack on top of the first layer of jars before adding the next layer. Ensure jars do not touch the sides of the canner.
  4. Secure the lid as described in general pressure cooking.
  5. Place the appropriate pressure regulator weight (5, 10, or 15 PSI) onto the vent pipe, as determined by your recipe and altitude.
  6. Heat the canner over high heat until a steady stream of steam escapes from the vent pipe. Allow steam to escape for 10 minutes to vent air.
  7. After 10 minutes, the pressure regulator weight will begin to jiggle or rock. Reduce heat to maintain a steady, gentle rocking motion. Begin timing your canning process according to the recipe.
  8. Maintain consistent pressure throughout the processing time. Adjust heat as necessary.
  9. Once processing time is complete, turn off the heat and allow the canner to cool naturally until the pressure is completely released. Do not force cool the canner for canning. This can cause liquid loss from jars.
  10. Once pressure is fully released, remove the pressure regulator weight and carefully open the lid.
  11. Using a jar lifter, carefully remove hot jars and place them on a towel-lined surface, allowing space between jars for cooling. Do not disturb jars for 12-24 hours.

6. Maintenance and Cleaning

Cleaning After Each Use:

  • Allow the cooker/canner to cool completely before cleaning.
  • Wash the pot, lid, and all removable parts (gasket, weights, racks) in warm, soapy water.
  • Use a non-abrasive sponge or cloth. For stubborn food residue, soak the pot before cleaning.
  • Rinse all components thoroughly and dry immediately to prevent water spots and maintain the polished finish.
  • Ensure the vent pipe and pressure release valve are clear of any food particles. Use a small brush if necessary.

Gasket Care:

  • Periodically remove the sealing gasket from the lid for thorough cleaning.
  • Inspect the gasket for cracks, hardening, or any signs of wear. Replace if damaged, as a worn gasket can prevent proper sealing.
  • Store the gasket loosely or inverted in the lid to prevent compression and prolong its life.

Storage:

  • Store the pressure cooker/canner in a dry place.
  • For optimal gasket life, store the lid inverted on the pot, allowing air circulation and preventing the gasket from being continuously compressed.

7. Troubleshooting

ProblemPossible CauseSolution
Pressure does not build or steam leaks from lid.Lid not properly sealed; gasket worn or improperly seated; vent pipe or valve obstructed; insufficient liquid.Ensure lid is locked correctly. Check and reseat or replace gasket. Clean vent pipe and valves. Add more liquid.
Pressure regulator weight does not jiggle/rock.Insufficient heat; vent pipe obstructed; wrong weight used.Increase heat. Clean vent pipe. Ensure correct weight for desired PSI.
Food is undercooked.Insufficient cooking time; pressure not maintained.Increase cooking time. Ensure steady pressure is maintained throughout cooking.
Discoloration on the interior bottom of the pot.Mineral deposits from water or certain foods.Clean with a solution of vinegar and water (1 part vinegar to 3 parts water), bring to a boil, then scrub. This is cosmetic and does not affect performance.
Lid is difficult to open after pressure release.Residual vacuum inside the pot.Ensure pressure is fully released. Nudge the pressure regulator weight to confirm no steam escapes. If still stuck, allow more cooling time.
