Operating Instructions

The Chef's Choice EdgeSelect Model 120 features a three-stage sharpening system. Each stage is designed for a specific part of the sharpening process to create a durable, sharp edge.

Understanding the Stages:

  • Stage 1 (Coarse Sharpening): This stage is for very dull or damaged straight-edge knives. It reshapes the edge using coarser diamond abrasives. Use sparingly.
  • Stage 2 (Fine Sharpening): This stage refines the edge created in Stage 1 or sharpens moderately dull straight-edge knives. It uses finer diamond abrasives.
  • Stage 3 (Stropping/Polishing): This stage polishes the knife edge, removing any burrs and creating a micro-bevel for exceptional sharpness and durability. It is also used for sharpening serrated knives.

Sharpening Straight-Edge Knives:

  1. Initial Sharpening (Very Dull/Damaged Knives):
    Turn on the sharpener. Insert the knife blade into the left slot of Stage 1. Pull the knife towards you with light, consistent pressure, lifting the handle slightly as you approach the tip. Repeat this motion 4-5 times for each side of the blade (alternating left and right slots of Stage 1).
  2. Normal Sharpening (Moderately Dull Knives):
    Turn on the sharpener. Insert the knife blade into the left slot of Stage 2. Pull the knife towards you with light, consistent pressure, lifting the handle slightly as you approach the tip. Repeat this motion 2-3 times for each side of the blade (alternating left and right slots of Stage 2).
  3. Finishing/Resharpening:
    Turn on the sharpener. Insert the knife blade into the left slot of Stage 3. Pull the knife towards you with very light pressure, lifting the handle slightly as you approach the tip. Repeat this motion 1-2 times for each side of the blade (alternating left and right slots of Stage 3). This stage polishes the edge.

Sharpening Serrated Knives:

Serrated knives should only be sharpened in Stage 3. Turn on the sharpener. Insert the serrated blade into the left slot of Stage 3. Pull the knife towards you with light pressure, ensuring the entire serrated edge passes through the slot. Repeat this motion 1-2 times for each side of the blade (alternating left and right slots of Stage 3).

Important: Always use light pressure when sharpening. Excessive pressure can damage the knife edge or the sharpener. Always clean your knife blade before and after sharpening.

Maintenance
