3. Setup

4. Operating Instructions

The Chef'sChoice 300 features two sharpening stages. Always begin with Stage 1 for dull knives, then proceed to Stage 2 for honing. For already sharp knives that need a quick touch-up, you may only need Stage 2.

4.1. Stage 1: Sharpening (Coarse)

This stage uses coarser diamond abrasives to create the first bevel of the edge and restore sharpness to very dull or damaged knives.

  1. Turn the power switch to the "ON" position.
  2. Insert the heel of the knife blade into the left slot of Stage 1. The magnetic guides will hold the blade at the correct angle.
  3. Pull the knife towards you with a slow, steady motion, applying very light downward pressure. Allow the sharpener to do the work. Pull the blade through until the tip exits the slot.
  4. Repeat this process for the right slot of Stage 1. Alternate between the left and right slots, performing 3-5 full strokes in each slot.
  5. After completing Stage 1, proceed to Stage 2.

4.2. Stage 2: Honing and Polishing (Fine)

This stage uses finer diamond abrasives to create the second, micro-bevel of the edge and polish it to a razor-sharp finish.

  1. Insert the heel of the knife blade into the left slot of Stage 2.
  2. Pull the knife towards you with a slow, steady motion, applying very light downward pressure.
  3. Repeat this process for the right slot of Stage 2. Alternate between the left and right slots, performing 2-3 full strokes in each slot.
  4. For optimal results, perform one final, very light stroke through each slot of Stage 2, alternating left and right.
  5. Turn the power switch to the "OFF" position and unplug the sharpener.
  6. Carefully wipe the blade clean with a damp cloth to remove any metal dust.

Note: Always pull the knife through the slots; never push it away from you. Maintain light pressure. Excessive pressure can damage the blade or the sharpener.

5. Maintenance

  • Cleaning: After each use, unplug the sharpener. Use a dry, soft cloth to wipe the exterior of the sharpener. Do not use water or abrasive cleaners.
  • Storage: Store the sharpener in a dry, safe place away from children.
